Steps to make Veg fried rice:
- Heat oil in a pan and saute carrot and capsicum separately.saute beetroot in another pan as it bleeds colour..
- After carrot and capsicum r done,take them aside.in the same remaining oil fry onions till crisp brown.take it out and keep aside..
- Now add cinnamon,cloves,cardamom,bay leaves,in remaining oil and stir.add cooked rice and saute for 2 minutes with some salt..
- Now add carrots,capsicum,fried onions,slit green chilli, fresh coriander,pav bhaji masala and mix everything nicely and gently.keep some fried onions and coriander aside for garnish..
- Now add beetroot at last and mix gently.Beetroot will lend nice red colour to rice at some places. Do not mix too much otherwise whole rice will become red instead of colorful..
- Now add turmeric in 2tsp hot oil and mix.add few drops of it to our fried rice here and there for nice yellow colour.leave the rice undisturbed for 8to 10 minutes..
- Now transfer it in a rice tray and garnish with fried onions,raisins and fresh coriander.our veg fried rice is ready to serve with yogurt and papad..
