- In a bowl mix flour sugar salt and yeast then add egg, water and knead the dough and add milk side by as kneading i.e for 5-6minutes.
- Tip out on a floured surface and roll out into a ball and place in aclean dry bag in fridge.
- Take the block of butter, cut it into half and place it between two sheets of baking paper and heat it with a rolling pin to flatten it into a rectangle.

- Turn it, then roll out again and do the fold again. Do it same twice more and after that cover with cling film and place back in fridge for 1hour.
- Then roll out the dough and fold again twice more and return to the fridge for more half hour, then gain give fold twice and let it rest in fridge for more 8hours or over night.
- Now prepare the filling by melting the butter little so that it's not runny and then add sugar and cinnamon and icing sugar and mix it thoroughly.
- Now roll out the dough into a rectangle and spread the filling.
- After that start rolling from one side and keep aside for final proving.
- Preaheat oven at 200°c and give egg wash with brush and bake it for 20-25minutes.
- For final presentation or shine to the pastry u can sprinkle sime sugar on the top of pastry while baking as show in final picture above.
